- 150g rump
- 1 egg yolk
- 2tsp tomato sauce
- 1tsp dijon mustard
- 20g onions, chopped
- 15g capers, drained and chopped
- 15g sweet gherkins, chopped
- 2g parsley, chopped
- 5 drops Worcester sauce
- 5 drops of Tabasco sauce

- Trim and dice beef rump evenly.
- In a bowl, mix the egg yolk with onions, capers and gherkins.
- Add the mustard, tomato sauce, Tabasco, parsley and finally the meat.
- Season to taste.
